Caesar Salad

 

Ingredients
Organic arugula
Organic Kale
Organic Romaine lettuce
There’s a product I love and is available in West palm beach, Boca, fort lauderdale and I think Miami too.. It’s called Mississippi Caviar.
What it is, is black eyed peas, chopped onion, tomato, cilantro, and lemon juice It also has a little bit of red pepper so it’s a bit spicy.
After I add the Mississippi Caviar to the caesar salad, I put it in the caesar salad dressing from the brand (Cindy’s Kitchen) and it’s always refrigerated. I get it from Sprouts which is a market here in south Florida.
The dressing has mango juice, coconut, and red pepper. I add a bit to that to the caesar salad and it gives it such an amazing taste!

Halibut

Ingredients
Halibut
Grapeseed oil
Melt butter
I have this every 3 weeks
Halibut has some skin so I remove it.
I put grapeseed oil and the melt butter on the pan and I poach the fish.
Once everything melted I put the halibut in and let it cook down a little bit and sometimes I’ll take the dish and rotate it and make sure it’s poaching or I’ll take a spoon and poach it a little bit. When the edges of the pieces of fish are a little white, after a couple of minutes, then you turn it over and let it get cooked. I take a fork and check it in the center and make sure it’s cooked. If not, then I’ll cut it and lay it onto the bottom and it’ll take another minute or two. Once it’s done, turn off the fire and sprinkle some himalayan sea salt, stir it and remove it from the fire immediately. No one likes dry fish!

Scrambled Eggs

Ingredients
Eggs
Melt butter
Water
Grapeseed oil
Whisk them, add himalayan salt, a tbsp of water and whisk again.
Add the melt butter and grapeseed oil
Heat on the third range from the whole range of heat
Let it sit for a few minutes, when it starts to set you stir it periodically and when it really starts to set you turn off the heat!
Take it off the heat and keep on stirring. Don’t overcook and don’t dry your eggs!

Chickpea Vegetable Dish

Ingredients
Wholefoods Indian Marsala (chickpea)
Fresh green peas- From Wholefoods “Petite Greenpeas” in the freezer department Melt butter
Never overcook anything.
I’ll take my bowl and put a couple tbsp of water on the bottom and put the heat to medium. When it starts to boil I’ll throw in the beans and stir them a couple of times and check out for when they’re warm and then I’ll turn off the heat and I’ll add a couple tablespoons of the melt butter.
So I’ll take those peas once they’re done and I’ll add it to the Indian Masala! Delicious
